秘製生炒腊味糯米飯 The secret fried preserved meat glutinous rice (Sticky rice) , Traditional Hong Kong dishes



天氣持續低溫,特別想吃暖胃的東西,所以菜館的羊腩煲,糯米飯,蛇羹通通適時出塲,小時侯每到冬天,老爸一定會弄糯米飯給我們吃,現在反而少回家了,特別掛念爸爸的手藝。

Continued cold weather , especially want to eat some hot dishes, so the restaurant 's sheep belly pot , sticky rice , snake soup, all shows up . when I was child , Dad will cook sticky rice for us to eat , its so so warm .



現在嘗試自己煮,之後再找機會煮給老爸吃~~
I try to cook by myself , then find a opportunity to cook for my father .

一大早到巿塲採買,材料如下
Shopping time , here is the ingredients

糯米半斤
glutinous rice (Sticky rice) 250g

臘腸膶腸各一條切一厘米粒
Chinese preserved meat sausage & liver sausage each a pair diced

冬菇四朶切粒
4 Dry mushroom diced

蝦米二湯匙
Chinese dry shrimp 2 soup spoon

蒜粒薑粒各一茶匙
Garlic & ginger minced each 1 table spoon

蒽粒一湯匙
Spring onion chopped 1 table spoon

油二湯匙(起鑊用)
Oil 2 soup spoon (For stir fired)

米酒一茶匙
Chinese rice wine 1 table spoon

生抽二茶匙
Light soy sauce 2 table spoon

老抽一茶匙
Dark soy sauce 1 table spoon

雞粉半茶匙
Chicken bouillon powder 1/2 table spoon

水半杯(蒸糯米時用)
Water 1/2 cup (use for steam glutinous rice)

做法:Method :

1。糯米浸最少三小時或過夜備用
Glutinous rice soak for at least 3 hours or over night .

2。糯米隔亁水,將糯米平鋪在一平碟上,儘量鋪平,隔水蒸20分鐘。中途開蓋二次把半杯水
分2次灑落糯米上。
Drain the water , glutinous rice tile on a flat dish , try to pave and steam for 20 minutes . Open and add 1/2 water halfway into the glutinous rice.

3。燒熱鑊,下2湯匙油,下薑粒爆香,轉小火再下蒜粒及冬菇蝦米爆香,沿鑊邊贊米酒。慢慢炒直到蝦米變金黃。
Heat the wok , put 2 soup spoon oil , put ginger , then turn small fire add garlic , dry mushroom & dry shrimp . Along the wok add rice wine . Stir fried until the dry shrimp turn to golden color .

4。維持小火下雙腸,直到腸內白色肥肉變透明及油份出來。
Keep the small fire , add meat & liver sausage , stir fried until the fat from sausage come out .

5。此時下蒸熟的糯米,不停兜炒,估計需十五分鐘,直到糯米飯炒散,與材料混和。
At the mean time , add steamed glutinous rice , keep stir fried , about 15minutes , until the glutinous rice spread and mix together with the ingredients .

6。覺得糯米飯硬度可以後,轉中火,下生抽老抽雞粉兜勻,直到顏色平均後,加入蒽粒,兜勻即可上碟。
Try the glutinous rice , if you think the texture is right for you , turn to middle fire , add light soy sauce , dark soy sauce & Chicken powder , stir fired until the color is mix , add spring onion , stir and it's done .

喜歡可加入些炸花生。但一定要最後落,否則會受潮變軟。
If you like , you can add some peanuts , but don't add it too early , it will become moisture .

This is not a easy recipe , but if you try it , you will love it !! Enjoy !! ^^
